Is it possible to have the famous family recipes up before Christmas?
I'm hoping for the ever-famous macaroni salad, chicken and broc casserole, etc. as well as the soon-to-be famous "death by chocolate trifle" and the like.
The recipe I am about to type here serves about 4 to 6 people:
1 lb of boneless chicken breast
1 package of frozen broccoli cuts or florets
1 can of cream of chicken soup
1/2 cup of mayonnaise
Shredded American/cheddar cheese
Breadcrumbs, preferably Progresso's Italian Seasoned. OTHERWISE you could use crushed Graham crackers...though I've never tried that before
1. Defrost and blanch the broccoli cuts/florets. DRAIN VERY WELL.
2. Dice the boneless chicken breast and boil to cook. DO NOT OVERCOOK. DRAIN VERY WELL.
Pre-heat oven @ 350 degrees.
3. Sauce mixture: Mix the cream of chicken, mayonnaise, shredded American/cheddar cheese.
4. In an oven-safe casserole, bowl or baking pan, spread the following:
first layer -- the drained broccoli
second layer-- the drained cooked diced chicken
third layer-- the sauce, spread evenly, covering every inch of the pan
lastly -- sprinkle the breadcrumbs all over (not a layer of breadcrumbs or this can get very salty).
-slightly coat pan with oil (olive oil preferably)
-heat pan at medium fire
-crack egg into pan
-gently flip egg without breaking yolk once underside has solidified
-once finished gently place onto plate
-place 2-4 thinly sliced SPAM products onto pan
-warm or brown until crispy
-place slices onto plate beside egg
-open rice cooker and place 1-2 scoops of white rice onto remaining open space on plate
-ketchup is an option.
-serve & enjoy!
***(Note: SPAM product can be substituted with Vienna Sausage, Hot Dog (Nathan's Preferred), canned Sardines, or pork & beans)***
Thembi introduced me to Sweet Potato Pie. It looks like pumpkin, but it's better. I love it. Here's her recipe.
Sweet Potato Pie
3 pounds of sweet potatos
3 eggs
1 cup dark brown sugar
1/2 tsp. salt
2 tsp. ground cinnamon
1 tsp. nutmeg
1/4 tsp. ground allspice
1 tsp. vanilla extract
3/4 cup evaporated milk
2 9 inch. partially baked pie shells
Preheat oven to 425
- In med saucepan boil potatoes in lightly salted water until tender (20 min.)
- Drain & Shake Put over low heat to dry potatoes
- Mash & beat potatoes until smooth
- Stir in beaten eggs, brown sugar, and rest of ingredients and mix
- Pour into shells & bake at 425 for 5 min
- Then reduce heat to 325 for 40 min. until center is set, but still soft.
one box of elbow macaroni
one can of sliced pineapple in heavy syrup
one chicken breast boiled and flaked
sweet pickle relish to taste
mayonnaise.
Make sure you boil the macaroni and chicken with salt.
Slice pineapple into chunks and drain the syrup.
Mix everything together and add more salt to taste.
Keep in fridge overnight before serving.
Roz's Pasta Fagiole Recipe, one of our favorite winter one pot wonders...
(Takes about 1 hour, serves 6 as a meal)
1/2 box mini pasta shells or spirals
1 lb. Italian sausage (patties or casings removed)
2 cans 14-oz. of low sodium beef broth
1 garlic clove, minced/smashed
1 onion, sliced
1 can 14-oz. beans (I use pink habichuelas), undrained
1 can 14-oz. diced tomatoes (roasted garlic flavored can be nice)
10-oz. package of chopped frozen spinach
1/2 c water
1 bay leaf
Italian Seasoning to taste
Remove spinach from freezer. Brown sausage (crumble), garlic and onion in tall soup pot. In a large soup pot, add broth, beans and tomatoes. Cover, boil on medium heat for 20 minutes. Add semi-thawed spinach and water. Continue boiling for 10 more minutes. Add pasta. Re-cover for 15-20 minutes more. Serve hot. Tastes even better the next day. Suitable for an entire meal. Freezes well.
